Pickle Pav Bhaji

Pickle Pav Bhaji

Tasty Indian street food dish with potatoes & veggies cooked in tangy tomato & butter sauce served with crispy buns. It is surely a Must try!!

Ingredients:

Potatoes - 3 Medium
Cauliflower - 400gm
Bottle gourd/Lauki - 250gm
Capsicum - 1 medium
Peas - 100gm
Onions - 2 medium
Tomatoes - 4 medium
Ginger Paste - 1tsp
Garlic paste - 1 tbsp
Tomato Puree (Optional)
Masalas-
Haldi
Hing
Kalonji
Coriander powder
Red chilly powder
Achari powder mix (Optional)
Amchur/ Mango powder
Lemon
Butter
6 in 1 Square Pav Packet(Square Buns)
For Garnishing-
I onion chopped
Coriander chopped
Salted Butter (Optional)

Method:


  1. Cut potatoes & bottle gourd into small pieces & cauliflower into small florets. Heat some oil in a pressure cooker & add a pinch of turmeric powder & 1tsp salt to it. Add the diced potatoes, bottle gourd, cauliflower florets & 1/3 of the peas & pressure cook them till its nicely boiled & mash-able. 


  2. Meanwhile saute chopped onions in a big pan till golden brown.Take it out.
  3. Add some butter (or Olive oil) and saute tomatoes till they leave oil. This should take about 15 mins as the tomatoes base the flavor of the dish. Add some ginger & garlic paste & keep stirring for a while.
  4. Then add some oil if required or else add 1/4th tsp of Nigella seeds (Kalonji) & Asateofedia (Hing). Then, add 1tsp Turmeric powder (Haldi), coriander powder, red chilly powder & mango powder (Amchur) & a lil water to stir it in the tomato paste. Also at this time I add some ready made tomato paste to give it some color & richness. (Also if the tomato paste seems less for the veggies ;)
  5. Now I add some Achar powder (Pickle powder) to it as I like its tangy taste. Its totally optional, so suit your taste buds. I add a 1-2 tsp of Achar Gosht Spcie Mix (Picture below) which is readily available in an Asian/Pakistani store. Also, you can make the Pickle/Achaar Spice Powder at home. I will post the recipe asap :)
  6. Once the spices are all cooked & blended into the tomato paste , add the chopped capsicum & the remaining peas to it & cook for a while till they are crispy.
  7. Meanwhile, your vegetables would have been cooked in the pressure cooker. Open the lid & stir them well with the ladle.
  8. .Now gently add them to the tomato paste in the pan. Mix well, cover with the lid & let them cook for a while on low flame.
  9. Open & adjust the the salt & red chilly powder according to your taste & sprinkle some fresh lemon juice or concentrate & mix.
  10. Press the mixture with this ladle shown in the picture below (Available in IKEA) or a steel square shaped ladle with a 90 degree handle as available in an Indian household. Basically to mash the mixture.
  11. Voila!! Your dish is ready. Garnish it with some chopped onions & coriander & also some salted butter. (Try Amul butter, if available :)
  12. Now, cut the Pav - square buns into halves & pour some olive oil on a flat pan & pan fry for a min each side till crispy.
  13. Serve the Pav & Bhaji along with some chopped onions & coriander to sprinkle on. Also, some butter would be nice :D 



Enjoy this wonderful recipe on a little get together or on a weekend, Since you can use the leftover Bhaji for the next day & you just need to pan fry the buns & its ready. Also, its good for your kids school tiffin or a picnic.
